Week 11 Day 1 - 12 weeks is almost over


Week 11 is here and the brick wall has slammed into my body .. Last week gave my body a bit of a shake up and left me feeling all kinds of demotivated.

Pretty sure a body snatcher invaded my body and left a she-hulk/hell demon in my place as I was all kinds of cranky , grumpy , whingey.

I wanted to crawl up under my blanket and die instead I dragged my sorry self to the gym and committed to at least 45mins of training ( most days I did the hour)

Sazzy has given me a new workout plan which I LOVE and have actually enjoyed pushing myself through

 
I wanted to give myself a little reward at the end of the challenge but wanted it to be something that will help keep me focused and on track with my journey,

So I spoke with a beautiful friend who runs Love is a place photography and have booked in for a “Boudoir” style photo-shoot in July. What better way to stay motivated than agreeing to be partially naked in front of a camera.

 
I feel that this challenge has really helped me change my focuses and certainly helped get rid of a lot of the negativity I have had about myself.

While I am not yet where I want to be body wise – I know that I can get there and I am a hell of a lot closer than before.

DOMS of Doom

Being honest - this week I am just not feeling it.
I have been fighting off a flu for the last 3 weeks which has left me with massive headaches.
Emotionally and physically exhausted but have tried pushing through the pain to get exercise in.

Tuesday I had my PT session - mix of Kettlebells, TRX, cardio an abs .
Found myself getting frustrated at my lack of coordination and I feel
It is totally due to my exhaustion and general feeling of being sick.
I jumped on the scales and felt a little saddened by a slight gain this week :(
However so many people have commented on how well I'm looking so hopefully the gain is muscle:)

DOMS has reached a new high and I had to get Monstaphace to undress me for my shower
As lifting arms above shoulder height was not working for me today!
Totally glad tomorrow is a holiday so I can sleep in and hopefully have a run in the afternoon

Well that's my update for now - I am too tired :(

Stuffed Avocado

A quick and easy vegetarian friendly recipe !!

1 avocado
2 boiled eggs
2 Roma tomatoes
Big Handful of spinach
1 Spanish onion
1/4 capsicum
Spring Onions to garnish

Cut avocado in two ( take flesh and place in mixing bowl)
Take the avocado shell and put into a plate
Chop all ingredients into small pieces and add to mixing bowl - mix well
Using a soup spoon - fill the avo shells :)
Place a couple of slices of spring onion onto to make pretty

That's it !! I know .. Simple and idiot proof

Everybody was Kung Flu Fighting !


There is nothing worse than that feeling right before you get bitch slapped in the face by the flu.

The fatigue and stuffy head gets me every time – I spent 90% of Sunday curled up on the couch fast asleep and still woke up feeling crap.

Getting sick with the flu 5 days before a friend’s wedding…Ain’t nobody got time for that.

I have a new meal plan for the last few weeks of the challenge so I decided to get a little bit inventive and try and make a natural flu fighting stir fry to have for lunch to try and combat illness that meets my meal requirements..  The ingredients I have given below are only for one but you can easily adjust to make a bulk lot for lunches which i shall be doing later this evening :)
 
Penny’s Kung Flu Fighting Stir Fry for 1
Stir Fry
100gram chicken breast – really thinly sliced
50grams baby spinach – roughly chopped
50grams Broccoli – cut into ¼
50grams Beans – cut into pieces
50grams zucchini- grated
1 small onion - grated
80grams sweet potato – grated
4 grape tomatos – cut into ¼
---------------------------------------
Flavouring
4cm piece of ginger – grated
2 Tablespoon of minced garlic
Juice from 1 small wedge of lemon
 
-----------------------------------------
 
How To
Prepare all ingredients as per above
Brown Onion and chicken in a pan
Add all other ingredients and cook until veges are starting to soften J
( I like my beans a little crunchy so I tend to cook for about 5 max )
 
Voila !!

Killing Me Softly with Kettlebells

This week has been a full on workout week for me and I have loved it - My body is changing and not only are other people starting to notice but I am seeing the changes for myself. I have had to buy new gym pants ..for the third time and also purchased a pair of Lorna Jane shorts.

My legs no longer resemble jelly on a plate and my butt is certainly firmer than 8weeks ago - I have even started lunging my way up the hill out the front of work much to the enjoyment of the council workers who sit and laugh at me every lunch break. It could also be from piggybacking the boyfriend around the house and proceeding to use him as my squats weight .. Gotta get inventive when you don't have a home gym. 




I was devastated that the 5km Color Run was postponed due to the freaking rain on the weekend as that was going to be my SundayFunday workout .. Instead I layed on the couch, watched movies and in the words of fat amy - nailed Horizontal Running.

At the end of every rainbow is a pot of gold and in this scenario that pot of gold is more time to train and be fully prepared to run the whole 5kms when the event is rescheduled in June.


Started the week with a Monday RPM/Spin class and then a a quick 15minute weight session - The leg press is slowly becoming my best friend.




Tuesdays PT session was a Kettlebell Killer .
During the my first SazzySession for the challenge - Sarah looked at me with an evil gleam in her big blue eyes and vowed that by the end of the session she would destroy me (Okay.. maybe they weren't her exact words) and by the end of this weeks Kettlebell session I actually thought death was imminent - covered in sweat, face like a puffer fish and redder than a raddish. The floor of the gym had never looked so good  - I'm talking the floor was drunk girl attractive, and as any PT would do - Sarah decided to capture the result on camera for you all to enjoy.



Our Wednesday group session was awesome and I really enjoyed the workout which consisted of 4 segments with 4 exercises 45seconds on, 15 second rest for 3 rounds .. except the repetitions of Burpees and Mountain Climbers. I love Burpees...said no challenger ever.  We ran out of time to do the last activity in the session called Face Off so 2 gorgeous challengers and I stayed behind to smash it out and then hit the treadmills for a little cardio to top it off. Hats off to everyone for really giving it their all in the session and supporting each other ... Especially the girls in the Awesome Foursome who did not laugh at my hilarious attempts of TRX crunches and tucks  <3




Thursday I was quiet sick with a borderline Migraine so I ended up home in bed instead of at the gym and failed on cooking dinner so I ended up having fruit toast after my nap .. Big Mistake and I have been paying for it with a ridiculously bloated and sore stomach since.

Taking part in the 30 days of Squats challenge at the moment and currently predicting that by the end of the 30 days - my buns will be buns of steel !!

I am using a mixture of weighted squats and plain boring body weight squats to break up the pain barrier a little bit :)

Chicken Casserole

Towards the end of the week I try to use up whatever vegetables I have left in the fridge so they dont go to waste.  As Saturday was a rainy cold miserable day I was craving warm comfort food so I decided to get a little creative with the remaining contents of my fridge and cupboard.
  • Chicken Thighs -  chop into thick cubes
  • 1 lg Sweet Potato - chop into thick cubes
  • 2 Carrot - chop into thick slices
  • 2 Zuchini - chop into thick slices
  • 1/2 a Broccolli - pull off the florets and cut into 1/4
  • 2 cups of stock - use homemade if possible
  • Tin of Lentils
  • Tin of Crushed Tomatos
  • 2 tablespoons gourmet garden minced garlic paste
  • 250grams Spinach - slice it up

  • Into a large casserole dish place all of the ingredients except the spinach
  • Put into a preheated oven at 150degs for 2 hrs
  • At the 2hr mark  turn oven down to 100 - stir and add the spinach and cook for anothe 30-40minutes.
VOILA

So easy - so tasty - and no mess :)



Really easy to portion up for lunches/dinner during the week as well :)
